We’ve had requests for more on our camping adventures- your wish is our command.
We should start off by saying that RV people are the nicest people ever. Within minutes of arriving at our campground in Oxford, IA, our new friend Jeff had helped us level our RV, lent us weenie roasting sticks and a can opener, and provided cocktails (more on that later).
It was a great time getting to know Jeff, his wife Kim and their awesome son Dawson (who is going to be an Eagle Scout very soon. They also introduced us to their fabulous friends Kim and Robin, who really enjoyed our glamping style.
For dinner, we had fire-roasted hot dogs, spicy country kechup, sauerkraut, whole-grain mustard, and a crunchy salad of cucumbers, peppers, olives, hearts of palm and arugula dressed in lemon juice, olive oil, a little balsamic vinegar and sea salt.Then, of course, we followed it all up with s’mores a la Margaux- old-fashioned marshmallows burnt to a crisp with super dark chocolate and graham crackers.
Here’s Jeff and Kim’s “Apple Pie” drink recipe, deemed “Next Level” by the entire group:
Reduce the following in a huge pot:1 gallon apple cider, 1 gallon apple juice, 8 large cinnamon sticks, and 4 cups of sugar. Let cool, then add 1/5 of Everclear. Voila.
Now we’re heading off to bed smelling woodsmoke and it’s lovely. Getting chilly, and it’s perfectly dark with a big full moon.
